Bake Brinjal with tomatoes

Sometimes I really don't know how to cook brinjal. Indian cooking does comes to mind when it comes to brinjal. That's when Google comes in handy. However, I have amend the cooking steps.

Ingredients:
1 binjal
several big tomatoes or a few handfuls of cherry tomatoes
garlic minced or chopped
salt
pepper
olive oil

Steps:
Preheat Over at 200C.
1. Remove the brinjal skin and cut into 0.5cm squares. It cooks faster if the brinjal is skinless.
2. Sliced the tomatoes.
3. Grease the baking tin bottom with olive oil.
4. Put 1 layer of brinjal at the bottom, then the tomatoes.
5. sprinkle with a handful of garlic, a pinch of salt and pepper and a dash of olive oil over the brinjal and tomatoes.
6. Repeat till all brinjals and tomatoes are used up.
7. Put into oven for 25-35 minutes or until all brinjals are tender.

Tadaa. The brinjals are soaked with yummy sweet tomatoes and fragrance too.
